Eat more Avos! try my not-quite-guac!

I’m a sucker for avocados.. It’s funny, I never was.. eating something green and with that oily texture really put me off… But now, one of my favorite things is a bit of Vegemite, on some homemade sourdough with avocado (don’t forget the pink salt!). One thing I have been doing lately is making a heap of avocado spread (not-quite-guac) and adding it to many of my meals to give me those good oils!

Super simple my friends! if you don’t have a food processor buy one! seriously… I make whole meals in these things in less than 1 minute! in fact, I want to put together a bunch of my favorite 30 second recipes! starting with this one!

Not quite guac

Ingredients

  • 3 ripe avocados
  • 1 garlic clove
  •  Juice of 1 lemon (debatable, I use more, but friends who use my recipe add less, start with 1 lemon and adjust id like some feedback on this)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon pink salt

Method

Throw all ingredients into the food processor and whip it up! you might have to scrape down the sides 10 seconds in! but this whole process should take 20 seconds! you this for chips, spreads, wraps, salads! seriously… use it everywhere!

Sweet potato, lentil curry burgers

When I first started being vegan I thought my diet was about taking foods away… I couldn’t have been more wrong. I think that’s why a lot of people who are interested in veganism don’t make the switch… Because they believe they will starve “I’d die if I didn’t eat meat…” really? You’d die..? *buzzzz* wrong! Well no… You won’t die! In fact you’ll bloody thrive! Best part about a vegan, whole foods lifestyle is that your body will love you!

I thought I’d tackle the age old question ‘but where do you get your protein?’ oh how about 40g from my lentils yo!

This recipe is so bloody easy and ridiculously tasty… You can change so many things to make it personalised to you! I tried changing the curry paste for taco spice and I got Mexican burgers! You want to impress your friends or family with an amazing meal that took less time to make than the half time break in the footy! This is for you! Best part is you can feed an army!

Prep time: 10 mins  Cook time: 15 mins

Ingredients

  • 1 cup mashed sweet potato (cold)
  • 400g can of lentils drained
  • 1 onion
  • 1 garlic clove
  • Table spoon Indian tandoori paste (or other)
  • 1 cup of oats, ground
  • Salt and pepper to taste
  • Wholemeal Turkish bread
  • Tomato /lettuce /cucumber /purple cabbage
  • Oil

Method

Add onion and garlic with some water in a pan, heat until translucent. In a separate bowl mix lentils, mashed potatoes, paste and oats together. Add the onion and garlic to the bowl and use hands to mix well. Form the mixture into egg rings on a heated oiled pan. Cook 5 mins on each side (or until desired). Toast Turkish bread, add the cooked burger with salads. Enjoy…
